Garlic Butter Salmon with Lemon Pepper Asparagus

Made with Roast'd Aspara Good — Lemon Pepper Asparagus.

Ingredients

  • 1 pack Roast'd Aspara Good (Lemon Pepper Asparagus) — served on the side
  • 2 salmon fillets
  • 400g baby potatoes, halved
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 lemon, half juiced + half in wedges

Procedure

  1. Roast the potatoes

    Toss the halved baby potatoes with a little oil and salt and roast at 200°C (390°F) for 20–25 minutes until golden.

  2. Sear the salmon

    Pat the salmon dry, season, and sear skin-side down in a hot pan for 4 minutes. Flip, add butter and garlic, and baste for 2–3 minutes. Finish with lemon juice.

  3. Cook the asparagus

    Air-fry the Aspara Good for 7–9 minutes until crisp at the edges.

  4. Plate

    Plate the salmon and potatoes, and pile the lemon pepper asparagus alongside as a side. Serve with lemon wedges.
